Born in Venezuela with European roots, Walter has a range of experience starting at Nobu Tokyo, followed by working for clients in Marrakech, Vienna, Barcelona and New York. His omakase opening in Ibiza brings a contemporary touch to the island that hasn’t existed before. Behind a regular residential building door, you’ll find his eight-seat Japanese bar, focusing on the freshest catch of the day and a range of sake to choose from. Get ready for a 16-course menu of Nigiri, ceviches and traditional Japanese ‘tapas’, transporting you directly to Japan.
